Argentinian born Ines Chattas, the new Culinary Director of NYC’s UN PLAZA GRILL, shares her Mom’s Day Orange Flan recipe, which was handed down to Ines by her mom. It’s light and delicious and delicately sweet, easy to make and serves up beautifully.
MOM’S ORANGE FLAN
Ingredients:
16 oz. orange juice
Eight large lady fingers, crumbled
6 oz. sugar plus additional sugar to caramelize mold
Six eggs
Dark chocolate for shaving
Mold for Baking
Directions:
Thinly coat a baking mold with sugar and sprinkle with a few drops of water to caramelize over a flame. Set aside to let it cool down.
Combine orange juice, lady fingers, eggs, and sugar together in the mixer until well incorporated. Pour into the mold and cook in a Bain Marie (water bath) for approximately 40 minutes at 350 degrees.
Once cold, unmold and garnish with shaved chocolate.

The Midtown Manhattan East kosher restaurant, with on-site validated parking for a flat rate of $20, will open for a special brunch at 11:30 a.m. on Sunday May 8.
A two-course (entrée and dessert) prix fixe menu for $39 will be offered, including a sparkling welcome in the guise of a glass of prosecco or a mimosa for all adult celebrants.
The menu’s nine entrée options cover the brunch gamut from breakfast classics to lunch favorites, Bananas Foster French Toast, Smoked Salmon Benedict and Avocado Toast to the Classic Plaza Burger and Grilled Chicken Paillard.
At 4 p.m., dinner will take the Mother’s Day stage with both the restaurant’s regular a la carte and $69 three-course prix fixe menus available. Whichever the menu choice, all the dinner guests of honor (a.k.a mom) will be greeted with a glass of prosecco.
